Never Fail Gingerbread

1/2 cup melted shortening
1/2 cup molasses
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
1/2 cup sugar
2 1/2 cups flour
2 beaten eggs
1 teaspoon ginger
1 cup hot water Combine sugar, shortening, and molasses. Add dry sifted dry ingredients alternately with hot water. Beat until smooth, add eggs and beat again. Bake in greased 9 x 13 pan at 350 degrees for 25 minutes. Makes two pans. Serve with whipped cream.

Pecan Rolls

Make Divinity Candy (found here on this site)
2 cups cream
2/3 cup corn syrup
2 tablespoons flour
1/4 cup butter
2 cups sugar
1 teaspoon vanilla
4 tablespoons corn starch
chopped pecans Cook sugar, 1 cup of cream, add corn syrup until boiling. Add the rest of the cream, don't let sugar stop boiling. Cook to firm ball stage, add flour, corn starch, add butter. Mix together, let cool. Beat until creamy. Cover each roll of divinity with caramel. Roll in pecans.

Chocolate Brownies

1 cup sugar
1/2 cup margarine
2 large eggs
4 tablespoons cocoa moistened in hot water
4 tablespoons milk
1 cup flour
1 cup nuts Cream margarine, sugar and eggs, and cocoa. Add dry ingredients and nuts. Put in a 9 x 9 pan. Bake 20 minutes at 350 degrees.

Cherry Nut Cake

1 1/2 cups sugar
3 eggs
2 cups flour
1/4 teaspoon salt
1 teaspoon nutmeg
1 teaspoon soda
2/3 cup shortening
1 cup buttermilk
1-2 cups sweet cherries, pitted
1 teaspoon cinnamon
1/2 teaspoon cloves
4 tablespoons cocoa Blend cherries in blender. Cream sugar, shortening, and eggs. Add buttermilk and cherries. Add dry ingredients. Bake at 350 degrees for 35-40 minutes. Can add nuts. Frost with easy milk chocolate frosting.

Sauce for Fruit Salad

6 tablespoons pineapple juice
1 tablespoon margarine
1 tablespoon corn starch
3 tablespoons sugar
1 beaten egg
1 cup whipped cream Combine all ingredients except whipped cream, cook until thick. Cool and add whipped cream. Use on fruit prepared for salad: Apples, Pineapple, a few nuts, bananas, or pomegranates.

Pumpkin Cookies

2 cups flour
1 cup oatmeal
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
1 can pumpkin
1 cup chocolate chips
1 cup butter or margarine
1 cup sugar Combine flour, oats, soda, cinnamon, and salt. Cream butter, sugars, egg, pumpkin, and vanilla. Mix well. Add dry ingredients. Bake at 350 degrees for20-25 minutes.

Christmas Roll

1 tablespoon yeast
1 cup warm water
2 tablespoons sugar
1 beaten egg
3/4 cup hot milk
3 tablespoons shortening
1 1/2 teaspoons salt
3 cups flour Dissolve yeast in water. Heat milk, shortening, sugar, and salt, let cool. Add beaten eggs, yeast, and flour. Let rise. Take strips of dough and roll in margarine, then in a mixture of 1/2 cup brown sugar, 3/4 cup white sugar, 2 teaspoons cinnamon, and 3/4 cup finely hopped nuts. on a buttered pan, form strips into one large roll, let rise. bake at 375 degrees for 15-20 minutes.

Potato Cheese Casserole

6 large potatoes boiled or baked
2 cans cream of chicken soup
1/4 cup minced onion
1 pint sour cream
1 cup grated cheese
2 cups corn flakes Peel and grate cooked potatoes. Add onion, soup, sour cream, and cheese. Mix together and put in a cake pan. Bake at 350 for 45 minutes. Mix crushed corn flakes with a small amount of margarine, put on top. Optional: Add chunks of ham to potatoes. Freezes well.
