Pumpkin Pie

9 inch pastry
2 Eggs
2 Cups cooked pumpkin
or 1-16 oz canned pumpkin
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
1/2 Teaspoon ground ginger
1/4 Teaspoon ground cloves
1-2/3 Cups evaporated milk
   
Heat oven to 400º








Beat eggs slightly with hand beater beat in remaining ingredients. Place pastry line pie pan on the oven rack first and then pour the filling in. Have ready a long two inch wide strip of tin foil that can be crimped around the pie crust flute to protect the crust from getting too brown. Bake 15 minutes and then reduce heat to 350º bake until knife come out clean
Note….Grandma Alice Johnson always used the same filling recipe but she would cook the mixture on top of the stove and then pour it into a baked crust.

Apricot Cake

1 cup sugar
1 cup oil
2 eggs
2 1/2 cups flour
2 teaspoons soda dissolved in 1/4 cup hot water
1 pint apricots with juice, blended
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon salt
1 cup nuts


 Blend eggs, oil and sugar. Add dissolved soda and fruit. Add flour and spices. Bake at 325 degrees for 45 minutes.

Cinnamon Rolls

3 cups milk
3/4 cup shortening
1 cup sugar
3 eggs
10 cups flour
3 teaspoons salt
 3/4 cup warm water
3 tablespoons yeast
2 tablespoons



Cinnamon Mix water and yeast, set aside. Mix milk, shortening, sugar, eggs, and salt. Add yeast and flour, knead. Let rise, roll out dough, brush with margarine. Mix together about 2 tablespoons of Cinnamon and 1 1/4 cups of brown sugar, put on dough. Roll up, cut, and put on buttered pans. Bake at 375 degrees for 10-15 minutes.

Raw Apple Cake

1 3/4 cups sugar
3/4 cup cooking oil
3 eggs
3 cups raw apples
2 1/2 cups flour
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon soda Mix eggs, oil, and sugar. Add dry ingredients. Add apples and nuts. Bake 45 minutes at 350 degrees. Frost with cream cheese frosting.

Zucchini Bread

3 cups flour
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
1 cup white sugar
1 cup oil
1 teaspoon soda
1/4 teaspoon baking powder
2 eggs
2 cups grated zucchini
1 cup brown sugar Sift together flour, salt, soda, baking powder, and cinnamon, set aside. Combine sugars and oil, add beaten eggs, vanilla, and zucchini. Add dry ingredients. Nuts, raisins, or chocolate chips may be added. Put in greased and floured loaf pans, makes 2 loaves. Bake at 350 degrees for 15 minutes, turn down to 32 degrees for 45 minutes.

Applesauce Fruit Cake

3/4 cup shortening
2 1/4 cups sugar
2 eggs beaten
2 cups applesauce
2 1/2 cups flour
1 1/2 teaspoons soda
1/2 teaspoon salt
2 tablespoons cocoa
2 tablespoons cinnamon
1/2 teaspoon nutmeg
1/2 cup nuts Chop nuts, raisins, cherries, and dates, set aside. Cream shortening, sugar, eggs and applesauce. Add dry ingredients, then add nuts and fruit. Bake at 350 degrees for 45 minutes.

Bottled Applesauce Cake

2/3 cup shortening
4 eggs
2 cups applesauce
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
2/3 cups raisins
2 2/2 cup sugar
2/3 cup water
3 1/3 cup flour
1/2 teaspoon baking powder
1 teaspoon cloves
2/3 cup nuts
Cream together shortening and sugar. Add eggs, water, and applesauce. Sift together dry ingredients and add to creamed mixture. Grease very well 8 wide mouth pint jars. Fill half full. Bake at 350 degrees for 45 minutes on a cookie sheet. Have lids hot and apply to bottles. Seal as soon as removed from oven.

Christmas Wassail

2 Cups Tang
1/3 Cup Lemon Aid Powder
1/2 Teaspoon Cloves
2 Cups Sugar
1 Teaspoon Cinnamon

Mix all ingredients together, store in a container. Add 3 teaspoons of mix per mug hot water.
