Zucchini Bread

3 cups flour
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
1 cup white sugar
1 cup oil
1 teaspoon soda
1/4 teaspoon baking powder
2 eggs
2 cups grated zucchini
1 cup brown sugar Sift together flour, salt, soda, baking powder, and cinnamon, set aside. Combine sugars and oil, add beaten eggs, vanilla, and zucchini. Add dry ingredients. Nuts, raisins, or chocolate chips may be added. Put in greased and floured loaf pans, makes 2 loaves. Bake at 350 degrees for 15 minutes, turn down to 32 degrees for 45 minutes.

Thanks! I lost the recipe I had, and this looks good. I will look for some zucchini at the grocery. I used to grow it, and will try this year in my new home. I'll really need this recipe then!
