Raw Apple Cake

1 3/4 cups sugar
3/4 cup cooking oil
3 eggs
3 cups raw apples
2 1/2 cups flour
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon soda Mix eggs, oil, and sugar. Add dry ingredients. Add apples and nuts. Bake 45 minutes at 350 degrees. Frost with cream cheese frosting.

Apple Buter

4 quarts cooked apples
1/4 cup vinegar
1/2 teaspoon cloves
2 quarts sugar
1 teaspoon cinnamon Cook until clear. Put in bottles, seal.

Christmas Salad

1 small lemon Jell-O
1 cup finely diced celery
1 small can crushed pineapple
1 small lime Jell-O
1 cup diced apples
1/2 cup nuts Mix Jell-O as directed. Add fruit and nuts.
