Frozen Pumpkin Parfait Squares

1 1/2 Cups graham cracker crumbs
1/4 Cup sugar
1/4 Cup melted butter

1 1/2 Cups pumpkin
1/2 Cup brown sugar
1/2 Teaspoon Salt
1 Teaspoon cinnamon
`/4 Teaspoon ginger
1/8 Teaspoon cloves
1 Quart softened vanilla ice cream Mix ingredients and press into the bottom of 9x9 pan.

Mix the pumpkin, salt and spices together. Fold in the ice cream. Pour onto the crumb crust and freeze. Cut into 9 squares and top with Whipped Cream and pecans.

I like this better than pumpkin pie

Household Cleaner

1 cup ammonia
1/4 cup baking soda
1/2 cup vinegar
1 gallon boiling water Mix all ingredients together. Cleans kitchen appliances, furniture, floors, carpets, painted surfaces and varnished surfaces. Can be used on windows, but they will need rinsed.

Glass Candy

2 cups sugar
1 cup corn syrup
1/2 cup water
Grease a cookie sheet or put in layer of powdered sugar
Heat to a boil while stirring. Lower heat and cook to a hard crack stage (300ยบ) without stirring. Remove from heat and add coloring and flavoring. Be careful that the steam from adding flavoring does not get in eyes. Cinnamon oil is very good but will severely burn your eyes if not you are not careful.

SPICY ORANGE CHICKEN

2 tablespoons corn oil
2 tablespoons corn starch
1 lb boneless skinless chicken cubed
1 cup cool chicken broth
1/4 cup soy sauce
1/4 cup slivered orange peel
1/4 cup dry sherry
1 clove garlic minced
1/4 cup orange marmalade
1/2 teaspoon ground ginger
1/2 teaspoon crushed dried red pepper In wok heat corn oil over medium-high heat. Add chicken 1/3 at a time. Stir fry 3 minutes or until browned. Return all chicken to the wok. Add orange peel, garlic and ginger. Stir-fry l minute. Stir together remaining ingredients. Stir into chicken. Stirring constantly bring to boil over medium heat and boil 1 minute. Serve over rice.

Cooked Frosting

1/2 cup canned milk
1 tablespoon margarine
2 cups sugar
1/2 cup milk
pinch of salt Combine all ingredients in a heavy pan. Cook to soft ball stage, cool. Beat until smooth and the consistency to spread on cake.

Pickled Beets

1 cup sugar
1 cup water from beets
1/2 teaspoon cloves
1 teaspoon salt
1 cup vinegar
1 teaspoon cinnamon
1/2 teaspoon allspice Cook beets in pressure cooker at 5 pounds pressure for 1 hour. Cool, skin, and cut in quarters. Put beets in bottle. Mix above ingredients, boil, pour over the beets in the bottles. Seal, and cold pack quarts for a 5 minutes. Just bring pints to a boil.

Pumpkin Roll

3/4 cup flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 eggs
2/3 cup pumpkin
1 cup walnuts
1 teaspoon baking soda
1 teaspoon ginger
1 sprinkle salt
1 cup sugar
1 teaspoon lemon juice
powdered sugar Sift together dry ingredients and set aside. Beat egg yolks 5 minutes or until thick. Beat egg whites until stiff, set aside. Gradually beat 1 cup of sugar in egg yolks, stir in pumpkin and lemon juice. Fold in dry ingredients and egg whites. Spread on greased and floured jelly roll pan. Sprinkle with nuts. Bake at 375 degree for 15 minutes. Loosen edges and turn out onto a dish towel sprinkled with powdered sugar. Roll towel and cake together, cool. Unroll towel, fill pumpkin roll with filling.

Filling: 1 cup powdered sugar, 4 tablespoons margarine, 3 ounces cream cheese, and 1/2 teaspoon vanilla.

Roll up pumpkin roll, wrap in foil, chill.

A Quilter''s Eggs and Fried Rice

Pan Fry Pre Cooked Rice
Olive Oil
Egg
Colorful Fruits (black berries, orances, walnuts) Your favorite things an fry pre cooked rice with a little olive oil. After the rice is hot, make a hole in the center of the rice for the egg. Add the egg. Squish the yoke. Season however you would like. I add a little pepper, but I do not add salt. I don't like to add salt.Flip the egg and break the egg up into pieces. Mix the egg with the rice. Serve hot with colorful fruits and nuts.

Tuna Noodle Casserole

2 Cans well drained tuna
2 Cups cooked narrow noodles
(I like to use 2” lengths spaghetti)
3 Hard cook eggs chopped
1 Cup diced onion
1 Cup diced celery
2-3 Tablespoons sour cream
2 Cans Cream of Mushroom soup
Grated Parmesan Cheese
Crushed potato chips or bread crumbs
Preheat Oven to 350ยบ

Make a sauce of the soup and sour cream. Combine sauce with noodles, eggs, and diced vegetables.

Top parmesan cheese and crushed chips. Bake for 40-45 minutes or until it browns and is bubbly.

You kids grew up on this. It was a real budget extender, especially because tuna was 17 cents a can.

Notes: Spices that go good with tuna are thyme crushed or dried rosemary. Try them.

For a variation use cheddar cheese soup for the sauce.

Boiled Raisin Cake

1 Package raisins
1 cup nuts
2 cups sugar
1 cup shortening
2 cups hot waterยบ
Boil the above 5 minutes, let cool.

Add:
4 Cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/8 teaspoon cloves
1 teaspoon cloves
Bake 1 hour in 325 degree oven

Chicken Broccoli Casserole

2 cups cheese
4 cups bread crumbs
2 cups cubed chicken
2 cups milk
1 cup chicken broth
1/2 teaspoon salt
1/2 cup margarine
1 pound tender broccoli or frozen broccoli
1/2 cup flour
1/2 cup margarine Mix together bread crumbs, margarine, and cheese. For sauce, melt margarine, add flour, stir. Add milk, broth, and salt. Stir with a wire whisk until thick and smooth. Layer in a buttered casserole pan. Crumbs, broccoli, chicken, sauce, repeat. Top with remaining bread crumbs. Bake at 350 degrees for 30 minutes. Can use turkey instead of chicken.

Pear and Raspberry Jam

10 medium pears
juice from 1 lemon
1 pint frozen red raspberries
5 cups sugar
1/2 package pectin
1 small raspberry jell-o Put pears in blender, cook pears, sugar, and lemon juice 20 minutes, or until thick and transparent. Add pectin, cook a few minutes longer, add berries and jell-o.

Jello Dumplings (Grandpa R's Special Recipe)

3 cups water
2 cups flour
1/2 teaspoon salt
light cream
1 package red jello
3 teaspoons baking powder
1 egg Combine flour, baking powder, salt. Add beaten egg and enough cream to make a batter. Boil water and jell-o, drop dumplings into boiling syrup by spoonfuls. Cook 20 minutes.

Pecan Pie

3 Eggs
1/2 Teaspoon salt
2/3 Cup of sugar
1/2 Cup of butter melted
1 Cup corn syrup
1 1/2 cups pecan halves Heat oven to 350ยบ
Beat eggs, sugar, salt, butter and syrup with hand beater. Stir in pecans. Pour into pastry lined pie pan. Tent a piece of tin foil over the top of pie. Bake for 40-50 minutes or until set. Remove the foil the last 10-15 minutes so the crust and pecans will brown.

Divinity Candy

4 cups sugar
1 cup water
1 teaspoon cream of tarter
1 cup corn syrup
4 egg whites
1 cup chopped nuts Beat egg whites, set aside. Boil sugar, corn syrup, add cream of tarter to a soft ball stage. Pour half into beaten egg whites. Cook the rest of the syrup to crack stage. Pour it into egg whites. Beat until it stands alone. Add food coloring and flavoring of your choice. Add nuts just before it sets up. Drop by a spoon on wax paper or a buttered pan.

Bread and Butter Pickles

4 quarts sliced cucumbers
2 large garlic cloves chopped
1/2 cup chopped onions
1/2 cup salt
4 1/2 cups sugar
1 cup brown sugar
1 1/2 teaspoons turmeric
3 cups vinegar
1/2 teaspoons ginger Mix together cucumbers, garlic, onions, and salt. Cover with ice. Let stand for 3 hours.
Tie in a a bag, 1 1/2 teaspoons celery seed, 1 1/2 teaspoons mustard seed. Combine sugars, vinegar, cinnamon, and turmeric. Add bag of celery and mustard seeds. Heat just to boiling, let stand 30 minutes. Add cucumbers, cook until cucumbers are clear. Bottle and cold pack for 5 minutes.

Pickled Cucumbers

4 quarts large cucumbers peeled and chopped
2 green peppers
3 large onions chopped
1/3 cup salt
5 cups sugar
1 1/2 teaspoon celery seed
3 cups vinegar
1 1/2 teaspoon turmeric
2 mustard seed
2 cups water Chop vegetables, add salt. Cover with ice, let stand 3 hours, drain.

Mix sugar, turmeric, vinegar, and water. Tie celery seed and mustard seed in cheese cloth, add to vinegar mixture. Bring to a boil, and cucumbers and stir well. Put pickles in bottles, seal, cold pack 10 minutes.

Broccoli Cheese Soup

3/4 cup margarine
1 onion
3 cups chopped broccoli
1 cup flour
3 cups hot water
2 tbsp. chicken broth granules or 6 cubes
2 cups milk
2 cups half and half
1/2 lb Velveeta cheese Melt butter in a large heavy pan, add broccoli and onion. Saute covered until broccoli is tender(about 10 min.)Add four ,stir it up.then add hot water, chicken seasoning and milk. Stir with wire whisk. Cook until thickened, stir in salt and pepper to taste. Add half n half. Don't boil. Add velveeta-let it melt. Serve over baked potato or wit bread bowl.

Beef and Broccoli Stir-fry

2 Tablespoons soy sauce
1 Tablespoon rice wine vinegar
1 Tablespoon sugar
½ Teaspoon sesame oil
2 ½ Teaspoons cornstarch
1 Clove minced garlic
1 Teaspoon grated fresh ginger
¾ Pound thinly sliced beef*
1 Medium head broccoli cut into
2 Tablespoons vegetable oil
2 Tablespoons vegetable oil
½ Cup chicken stock
2 Tablespoons oyster-flavored sauce Make a marinade for meat by mixing the sugar, sesame oil, into medium bowl.Mix in cornstarch until smooth.Add ginger and garlic.Immerse beef and cover with plastic wrap.let set 30 minutes at room temperature.Heat wok add 2 tablespoon oil and coat sides.Stir-fry meat for 2-4 minutes until well browned. Use slotted spoon to transfer meat to plate. Immediately add broccoli and chicken stock. Cover pan and cook until crisp. Uncover pan and stir in meat and oyster sauce

Fisherman's Fudge Cake

2 cups sugar
1 cup shortening
2 squares baker chocolate
1/2 teaspoon salt
1 cup milk
4 eggs
2 cups flour
1 teaspoon vanilla Separate egg yolks and whites. Beat egg whites and set aside. Cream shortening, sugar, and egg yolks. Combine dry ingredients and add alternately with milk. Add melted chocolate, vanilla, and nuts. Fold in beaten egg whites. Bake in tube pan for 1 hour, 20 minutes at 375 degrees.

Oven Carmel Corn (Grandma Edith Peterson)

2 cups brown sugar
2 sticks butter or margarine
1/2 cup corn syrup
1 teaspoon vanilla
6 quarts popped corn
1 teaspoon salt
1 teaspoon soda
1 teaspoon butter flavoring
1 cup nuts (Optional)
Boil sugar, butter and salt for 5 minutes. Remove from heat and add soda and butter flavoring. Stir well over corn/nuts. Spread on cookie sheet. Place in 200ยบ oven for 1 hour, stirring every 15 minutes. Store in covered container.

Pumpkin Pie Filling

1 1/2 cups pumpkin or squash
1 cup rich milk
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice

1 tablespoon butter









 Mix all ingredients, pour into unbaked pie shell, bake until a knife can be cut into the filling and come out clean. Serve with whipped cream.

Orange Salad

1 3 ounce orange Jell-O
1 small vanilla cooked pudding
1 Americana tapioca pudding
3 cups boiling water
1 can mandarin oranges
1 8 ounce cool whip Mix together Jell-O and pudding, add 3 cups boiling water, boil 1 minute. Let cool, when almost set, add drained mandarin oranges and cool whip. Set.

My Fudge

2 cups cream
1 1/2 teaspoon cocoa
4 cups sugar
1/2 cup corn syrup









Stir cocoa into sugar until it is the color you want the fudge to be, it will be a little darker when mixed with moisture. Add cream and corn syrup. Cook to a firm ball stage or a little more. Let cool completely. Beat with a spoon until fudge is creamy and starts to set up.

Pumpkin Pie

9 inch pastry
2 Eggs
2 Cups cooked pumpkin
or 1-16 oz canned pumpkin
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
1/2 Teaspoon ground ginger
1/4 Teaspoon ground cloves
1-2/3 Cups evaporated milk
   
Heat oven to 400ยบ








Beat eggs slightly with hand beater beat in remaining ingredients. Place pastry line pie pan on the oven rack first and then pour the filling in. Have ready a long two inch wide strip of tin foil that can be crimped around the pie crust flute to protect the crust from getting too brown. Bake 15 minutes and then reduce heat to 350ยบ bake until knife come out clean
Note….Grandma Alice Johnson always used the same filling recipe but she would cook the mixture on top of the stove and then pour it into a baked crust.

Zucchini Casserole

4 cups grated zucchini
1/2 chopped onion
1 can cream of chicken soup
1 cup grated carrots
1 cup sour cream
1 box stove top stuffing

 Cover zucchini, carrots, and onion with water, boil 5 minutes. Mix stuffing as directed on package, using 1 tablespoon extra butter. Pour one half of the dressing mix into a buttered casserole dish. Add sour cream and cream of chicken soup to cooked vegetables. Pour zucchini mixture on top of the stuffing. Add the rest of the stuffing on the top. Bake at 350 degrees for 30 minutes.

Banana Cake

1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 cups flour
1/4 teaspoon baking powder
3/4 teaspoon soda

1/4 cup cup buttermilk

1/2 teaspoon maple flavoring


 Cream shortening, sugar, mashed bananas, and eggs. Add buttermilk, and maple flavoring. Add dry ingredients. Bake at 350 Degrees for 45 minutes. Frost with maple flavored frosting.

Christine's Salsa

20 large or 30 small tomatoes
3 long green peppers
5 small jalapeno with seeds (for mild use 3 jalapeno and a few seeds)
2 red bell peppers
2 cups vinegar
4 medium onions
4 green bell peppers
1 cup brown sugar
4 tablespoons salt
1/2 teaspoon garlic salt Peel tomatoes, cut in chunks. Food process other ingredients. Simmer for 3 hours. Stir occasionally. Put in bottles and seal. May want to cold pack 10 minutes.

Dill Pickles

2 quarts water
3/4 cup uniodized salt
1 quart vinegar
1/2 teaspoon alum per quart Optional you can add garlic or chopped onions.

Put a sprig or two of dill weed in the bottom of each bottle. Add onions or garlic if desired. Fill each bottle with small cucumbers. Heat vinegar, water, and salt to boiling. Pour over cucumbers in bottles, let stand for 5 minutes. Pour back into pan, bring to a boil. Add 1/2 teaspoon alum to each quart. Pour vinegar mixture over cucumbers, have the lids hot and ready to seal.

Mustard Pickles

Cucumbers
water
salt
1 heaping tablespoon mustard
1 1/2 heaping tablespoon turmeric
1 1/2 tablespoons flour
3/4 cup sugar
1/2 cup water
1/2 cup vinegar Peel and slice cucumbers. Cook in salt water until tender.
Add seasonings to cucumbers, mix and simmer. Pack in jars and seal.

Chicken Pot Pie with Biscuit Topping

2 Small red potatoes cubed
1 16 oz frozen mixed vegetables unthawed
1 Cup chopped onion
1 Teaspoon McCormick’s Grill Mates
4 Cups cubed chicken
.2 10 oz cans of cream of chicken soup
1 Can Grands biscuit dough
1 Tablespoon melted butter
¾ Teaspoon Black Pepper Preheat oven to 350 degree. Cover cookie sheet with tin foil. Place large casserole dish (2 1/2 quart) on cookie sheet. In large bowl place cubed potatoes. Add veggies, onions Chicken Seasoning, cubed chicken and mix. Pour mix into the casserole dish and smooth. Cover with foil and bake for 1 1/2 hours. Remove from oven and spread biscuits over top. Brush with butter sprinkle with pepper. Return to over to bake for 15-18 minutes or until brown

**Note: There was about a cup or more too much filling for my large red casserole dish so need to cut down on the veggies to make smaller amount. Most of the red potatoes were still uncooked so need too dice up small and run through the microwave for a couple of minutes before adding to the mix. The mix also needs to have a little salt added. I didn’t care for the biscuits being cooked on top because the roll bottoms were still gooey. I want to try splitting the roll layers and see if bottom will cook then or just bake them ahead and pour mix over when done.

1 pound cranberries

2 oranges Core apples, do not peal. Clean oranges of all white membrane and seeds. Grind berries, apples, and oranges. Add Sugar. Do not cook. Store in refrigerator.

Chocolate Zucchini Cake

1/2 cup margarine

1/2 cup oil
2 eggs
1/2 cup buttermilk

1/2 cup chopped nuts Cream together margarine, oil, sugar, eggs, vanilla, and buttermilk. Sift together flour, soda, cloves, cocoa, cinnamon, and salt. Add grated zucchini to creamed mixture, add dry ingredients. Put in a greased 9 x 13 pan. Sprinkle with chocolate chips and nuts. Bake at 350 degrees for 30 minutes. Chocolate chips and nuts can be left off and cake can be frosted with chocolate frosting.

Wheat Bread

12 cups flour Mix all ingredients, let stand for 10 minutes. Beat 10 minutes. Let raise twice. Put in bread pans and let rise. Bake at 350 degrees until it starts to brown, then turn down to 250 degrees. Bake for 45 minutes.

Marshmallow Popcorn Balls

6 Tablespoons butter or margarine
3 cups tiny marshmallows
1/2 of 3oz. package of Raspberry Jell-O (3 tablespoons)
3 quarts popped corn In medium sauce pan over medium heat melt butter and add in marshmallows. Stir until melted, stir in dry Jell-O. Pour over popcorn and mix well. With buttered hands shape into balls.

1 egg
2 1/2 cups flour
2 teaspoons baking powder
1/2 cup shortening
1/2 cup sweet milk
1 teaspoon vanilla Cream sugar, egg, shortening, milk, and vanilla. Add flour and baking powder. Mix together. Roll out dough to about 1/4 inch. Cut out cookies, put 1 teaspoon filling between two cookies. Bake at 350 degrees for 10-12 minutes.

Cherry Pie

1 quart pie cherries
1 teaspoon red food coloring
3 tablespoons corn starch
2 cups sugar
1 teaspoon almond flavoring If cherries are already sweetened, use 1 cup of sugar instead of 2. Place cherries, sugar and coloring in pan, simmer 20 minutes. Add cornstarch (mix with cold water before adding) and flavoring. Bake at 400 degrees for 10 minutes, reduce heat to 300 degrees for 35 minutes.

Lime or Lemon Cottage Cheese Salad

1 small package lemon or lime Jell-O
1 small can crushed pineapple
1 cup cool whip or whipped cream
1 3/4 cups water
1 small cottage cheese Boil water, add land dissolve Jell-O. When Jell-O is partially set fold in pineapple, cottage cheese, and cool whip.

Berry and Peach Jam

12 cups peaches
3 1/2 cups berries
15 cups sugar
3 small packages peach jello
2 packages pectin
1 tablespoon margarine Follow pectin recipe on how to mix. Cook 4 minutes. Bottle according to pectin instructions.

Rhubarb Pie

1 1/2 cups sugar
3 tablespoons flour
1/2 teaspoon nutmeg
3 tablespoons butter
3 cups sliced rhubarb Mix ingredients together and put in unbaked pie shell, put pie crust on top for a two crust pie. Bake at 400 degrees for 10 minutes, turn down oven to 300 degrees for 35 minutes. Pie filling can be frozen.

Peanut Brittle

2 cups sugar
1/2 cup hot water
1 1/2 teaspoon soda
2 tablespoons margarine
1 cup white corn syrup
1/2 teaspoon salt
peanuts Mix sugar, corn syrup, and water. Bring to a boil, add peanuts. Cook on medium heat until amber in color. Add margarine and salt, stir well. Add soda, add until light and foamy. Pour onto buttered cookie sheet. Do not stir after putting onto cookie sheet. Test color on white saucer.

Sweet-Sour Pickles

2 gallons cucumbers cut in spears
1 1/2 cups salt
3 quarts water
2 teaspoons alum
1 quart vinegar
1 teaspoon turmeric Mix salt into enough boiling water to cover cucumbers. Leave over night. Drain, rinse several times.
Mix together water, vinegar, alum, and turmeric. Add cucumbers and simmer for 1/2 hour. Put a sprig of dill and 1 grape leaf in each bottle, makes 6 quarts. Put cucumbers in jars. Boil 1 quart vinegar, 1 quart water, and 8 cups sugar, pour over cucumbers, seal.

1/2 package chocolate chip cookie
1 cup peanut butter
1 package graham crackers crushed Mix together peanut butter and butter,add graham crackers and powdered sugar. Mix and press in a buttered pan. Melt together the chips, spread on top and cool

Rhubarb Jam

8 cups rhubarb cut up
1 cup crushed pineapple
1 package strawberry jello
5 cups sugar
1 1/2 packages pectin Mix together rhubarb and sugar, let stand 5 hours or over night. Add pineapple, boil 20 minutes. Add pectin and jell-o. Bring to a boil, put in bottle and seal.

Oatmeal Cookies by Desertsky Quilting

Ingredients:

2 sticks butter
4 eggs
1.5 cups brown sugar (more if you want them sweeter - brown is not as sweet as white)
1 t. vanilla
1.5 t baking soda
1 t. cinnamon (or whatever)
couple of shakes of salt
1.5 cups flour
3 cups oatmeal
1 c. dark chocolate chips or chunks
1 c. golden raisins
1 c. dried cranberries

Directions:
Preheat oven to 350.
Cream sugar and butter.
Add vanilla, baking soda, salt, cinnamon, and eggs.  Beat until well mixed.
Add flour, beat until well mixed.
Add chips, raisins, cranberries, mix well.
Add oats, half and half at a time.

Drop small spoonfuls on ungreased cookie sheets and bake 10-12 minutes.  Cool for a minute and then put on racks to cool completely before putting in cookie jar.

Brownie

1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1/3 cup cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder Preheat oven to 350





Grease and flour an 8 inch square pan.

In a large saucepan, melt butter. Remove from heat, and stir in sugar, eggs, and 1vanilla. Beat in, flour, salt, and baking powder. Spread batter into prepared pan.

Bake for 25 to 30 minutes.

Pioneer Pancakes

1 cup milk
2 eggs
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup wheat kernels
2 tablespoons sugar
1 teaspoon soda
4 tablespoons oil

Put milk and wheat kernels in blender. Blend on high for 4 minutes. Turn to low and add eggs, oil, and dry ingredients. Cook on grill like any other pancake.

Bacon, Egg, Cheese Breakfast Cups

While visiting the blog http://www.adventuresofourfamily.com about a month ago I found this great recipe.  Last weekend I finally got time to make it.  It is one of the best things I have eaten in a long time and I plan to make this again and again.








 Items Needed
Eggs
Bacon
Cheese
Crescent Roles
Optional Items
Onions
Green Peppers
Red Peppers
 Take the Crescent Rolls and put them into a cupcake tin.  I have a large family so I did 2 packages of roles it took 1 and a half to fill my tin.  I then cooked eggs, onions, green peppers, red peppers in a pan on the stove.  Do not cook them completely you will want them some runny.
 I precooked in microwave some bacon and crumbled it up.
 put the runny eggs in the cupcake tin on top of rolls that are put into tin first.
 cover with bacon and cheese
 cook for about 15 minutes on 350 when done the edges of the rolls should be brown and cheese melted.
At this point use a knife to run around the edges of the cup and then pull out.  For me take 2 wonderful pictures of them as the kids behind you almost knock you down trying to get to them and eat them. With 5 of us in the family only 1 got left over (that means they went over well)  The family loved them and we will make them again.  Again you can find the original link by clicking the link above or

Grandma Hall's Sugar Cookies

1 cup shortening
2 cups sugar
5 cups flour
3 teaspoons baking powder
1 teaspoon nutmeg
3 eggs
1 cup light cream
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla 



Cream sugar, shortening, and eggs. Add cream and vanilla, add dry ingredients. Roll out and cut into shapes. Sprinkle with cinnamon and sugar before baking, or frost.

Easy Milk Chocolate Frosting

3 tablespoons margarine
2 tablespoons cocoa
1 1/2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla Melt 3 tablespoons margarine over low heat in a saucepan. Remove from heat and add 2 tablespoons cocoa, stir until dissolved. Add 1 1/2 cups powdered sugar, 2 tablespoons milk, and 1 teaspoon vanilla. Beat until smooth. For plain frosting, add 2 more tablespoons powdered sugar instead of the cocoa.

Chocolate Potato Cake Icing

1 cup canned milk
1 cup sugar
3 egg yolks
1 cup margarine
1 teaspoon vanilla
1 cup coconut
1 cup nuts Combine all ingredients in a sauce pan, boil stirring over medium heat until thickened. Cool and frost cake.

Rebecca Quilts!

Meat Loaf

1 pound ground beef
1 egg
4 slices of bread, take bread and get it wet under tap, squeeze out water.
3/4 teaspoon salt
1 small onion minced







Mix together and mold into pan. bake at 350 for 45 minutes. when it is almost done, put tomato soup on top.

Dutch Oven BBQ Chicken and Rice Scout Style



Last Saturday the 11 year old scout patrol met for lunch.  We had asked our scout to come up with a meal plan but he had forgot to plan something so we fell back to the old standard as Doug my assistant calls it.  The recipe is simple and easy.  I like it best in the Dutch Oven but can be made on the stove just as easy.



2-3 pieces of Boneless Skinless Chicken.
1 Onion
1 Green Pepper (optional Doug loves the color so to him we had to have it)
1-2 Cans Corn
1-2 Bottles of BBQ sauce I like the honey BBQ
1 box Minute Rice
Seasonings to taste (Salt, Pepper, Garlic salt or minced garlic or what ever spices you like with BBQ)

Brown in the dutch oven (using oil) the Chicken.  You can add the onions at this time also depending on how cooked you like your onions, I toss mine in now.  Once the chicken is browned pull it out of the Dutch Oven and cut it up into smaller pieces.  Toss them back into Dutch Oven.  Have scout help or if at home and have kids get them to help (why do you think BeccaCooks likes to cook so much get them involved)

Once the chicken is cooked though you can add the Corn (with its liquid), and the BBQ sauce.  Take the empty BBQ sauce containers fill them with water shake them up and pour that water also into pot.  You can add little or a lot of liquid depending on how many you need to serve.



Bring the liquid to a boil and then add the minute rice.  Stir well continue cooking for about 5 minutes.  Then serve.

If you are new to dutch oven cooking or old hat the way you clean up is different then in the kitchen.  You never wash your dutch oven out, with soap.  They get seasoned with oil.  Because the BBQ sauce will seep into the pores of my dutch oven and make every thing taste BBQ I fill my Dutch oven full of water and boil it for 5 min after cooking my BBQ chicken and rice and then I re-oil my pot and put it away.  My scouts love this meal and I hope that you will also.

Pumpkin Muffins


1 cup pumpkin
1/2 cup packed brown sugar
1/4 cup melted margarine
1/2 teaspoon salt
2 eggs
2 cups flour (or 1 cup white and 1 cup wheat)
2 teaspoons baking powder




Preheat oven to 350 degrees. Mix pumpkin, brown sugar, margarine, and eggs. In separate bowl, sift flour, baking powder, and salt. Add dry ingredients to pumpkin mixture and stir until just combined. Spoon batter into 12 muffin cups. Bake 20 minutes.

Variations: Add 1/2 cup chocolate chips, 1/2 cup raisins, 1/2 teaspoon cinnamon and, 1/4 teaspoon nutmeg.

Apricot Cake

1 cup sugar
1 cup oil
2 eggs
2 1/2 cups flour
2 teaspoons soda dissolved in 1/4 cup hot water
1 pint apricots with juice, blended
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon salt
1 cup nuts


 Blend eggs, oil and sugar. Add dissolved soda and fruit. Add flour and spices. Bake at 325 degrees for 45 minutes.

Lemon Meringue Bars

Crust:
1 cup butter
1/2 cup powdered sugar
2 cups flour

Filling:
4 eggs beaten
2 cups sugar
6 teaspoons lemon juice


Crust:
Combine and mix well, press into a 9 X 113 pan. Bake 350 degrees for 15 minutes or until brown.

Filling:
Combine and pour over cool crust. Bake at 350 degree about 30 minutes or until set. Cool and 1/4 cup flour sprinkle with powdered sugar. Cut in squares

Simple Dinner

BeccaCooks cooked us up dinner last week and wanted to share with all a simple mood.  She cooked up a box of angle hair pasta roni, Chicken and fresh spinach.  She had a fun time getting the place mat all set up and then had to eat in front of us what a nice kid.
