Zucchini Bread

3 cups flour
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
1 cup white sugar
1 cup oil
1 teaspoon soda
1/4 teaspoon baking powder
2 eggs
2 cups grated zucchini
1 cup brown sugar Sift together flour, salt, soda, baking powder, and cinnamon, set aside. Combine sugars and oil, add beaten eggs, vanilla, and zucchini. Add dry ingredients. Nuts, raisins, or chocolate chips may be added. Put in greased and floured loaf pans, makes 2 loaves. Bake at 350 degrees for 15 minutes, turn down to 32 degrees for 45 minutes.

White Cake with Strawberry Topping

1 white cake mix
2 cups cool whip
1 teaspoon vanilla
1 8 ounce package f cream cheese
2 cups powdered sugar
1 large package danish dessert
2 packages frozen or fresh strawberries, or raspberries
1 1/2 cups water Mix 1 white cake mix according to package directions, bake in a cookie sheet.
Mix softened cream cheese, cool whip, powdered sugar, and vanilla. Spread on cooled cake.
Mix danish desert and water. Follow instructions on box. Add strawberries. Cool and pour over cake. Keep refrigerated.

Applesauce Fruit Cake

3/4 cup shortening
2 1/4 cups sugar
2 eggs beaten
2 cups applesauce
2 1/2 cups flour
1 1/2 teaspoons soda
1/2 teaspoon salt
2 tablespoons cocoa
2 tablespoons cinnamon
1/2 teaspoon nutmeg
1/2 cup nuts Chop nuts, raisins, cherries, and dates, set aside. Cream shortening, sugar, eggs and applesauce. Add dry ingredients, then add nuts and fruit. Bake at 350 degrees for 45 minutes.

Quick Bread

2 tablespoons yeast
3/4 cup warm water
2 2/3 cup water
1/4 cups sugar
1 tablespoon salt
3 tablespoons shortening
5 cups flour Mix yeast and 3/4 cup water. Add salt, sugar, shortening and remaining water. Add 2 1/2 cups flour, mix. Add remaining flour, knead. Let raise until double in bulk. Put in loaf tins, let raise until double in bulk. Bake 30 minutes at 350 degrees or 375 degrees.

Fudge

4 1/2 cups sugar
2 squares margarine
2 cups chopped walnuts
3 6 ounce packages chocolate chip
1 can evaporated milk
2 teaspoons vanilla Boil sugar and milk for 8 minutes, stirring constantly, remove from heat. Add chocolate chips, margarine, nuts and vanilla. Put back on heat until everything is melted. Pour on buttered cookie sheet. Cool and cut in squares.

4 quarts cooked apples

Grandma Hall's Soap

6 cans lye
10 quart buckets of hot water
24 pounds grease













Put grease, lye, and 2 buckets of hot water in a drum cut in half. Boil until grease is dissolved, add the rest of the water. Stir after each bucket is added. It will go thick and string from stirring stick. Put half in a no. 3 tub rinsed with cooled water. when hard, about 2 days, cut and dry. Stores well.

Note: I doubt anyone will use this, but thought it was a good reminder of how it used to be.

Corn Bread

1 cup yellow corn meal
1 cup sifted flour
2 teaspoons baking powder
1/3 cup soft shortening
1 cup milk
1 egg






 Sift dry ingredients into a mixing bowl. Cut in shortening until well blended. Beat milk and egg together. Mix with dry ingredients until just blended. Pour into a well buttered 8 inch square pan. Bake at 400 degrees for 25 minutes or until done. Serve warm.

Delicious Pudding

Syrup:
1 cup brown sugar
2 cups boiling water
2 tablespoons butter

Pudding:
1 tablespoon butter
1/2 cup sugar
1/2 cup milk
1 cup flour
1 teaspoon baking powder
1 teaspoon soda
1/4 teaspoon nutmeg
1 cup raisins

Mix all ingredients to make batter. Drop in spoonfuls on top of syrup mixture. Bake 40 minutes at 350 degrees.

Soft Chocolate Chip Cookies

1 cup sugar
2 cups brown sugar
2 cups Crisco
4 eggs
2/3 cup milk
6 cups unsifted flour
2 teaspoons salt
2 teaspoons soda
2 teaspoons milk
1 package chocolate chips


Cream sugars and shortening. Add eggs and milk. Add dry ingredients, vanilla and chips. Bake at 375 degrees for 8 to 12 minutes. Do not over bake. Remove when just starting to turn brown.

Caramels

2 cups sugar
2 cups cream
1 dash of salt
2 cups corn syrup
3/4 cup evaporated milk
2 teaspoons vanilla







Boil sugar, syrup and salt. Heat milk in separate pan. Add 1/9 cup of milk at a time to sugar mixture, about every 5 minutes. After all milk is added, cook to a soft ball stage, add vanilla .Pour into a buttered pan. Let cool, cut into squares

Jell-O Dessert

Crust:
3 cups graham cracker crumbs
1/2 cup finely chopped nuts
4 teaspoons margarine

Filling:
1 can evaporated milk
3/4 cup hot water
1/2 cup lemon juice
1 package jell-o
1 cup sugar

 Crust: Line a 13 x 9 cake pan with half of the graham cracker mixture. Save the other half for the top.

Boil 1 can evaporated milk, in can for 5 minutes. Chill and whip. Mix jell-o (Red or lemon) in water, add sugar and lemon juice, dissolve well, cool. Cool until syrupy. Add to whipped milk. Pour on top of graham cracker crumbs. Sprinkle remaining crumbs on top. Chill.

Date Balls

1 cup butter
1 1/2 cups sugar
2 cups chopped dates
2 teaspoons milk
2 beaten eggs
2 cups chopped walnuts
1 teaspoon vanilla
5 cups rice krispies
coconut

Melt butter and sugar in heavy skillet over medium heat. When melted add chopped dates. Bring to a boil, stirring constantly, remove from heat. Add milk and eggs, then boil for 2 minutes. Add nuts, rice krispies, and vanilla. Cool, roll into balls and roll in coconut.

Meat Loaf

2 lb ground beef
1/2 c onion
1 egg
1 can crean of mushroom soup
1 t salt
1/2 c bread crumbs
1 T worcestershire sauce
Dash of pepper
2 T chopped parsley

Mix all together well. bake for 1-1 1/2 hours at 350. tomato slices may be put on top or at the last minute grate cheese over top for variety.

Bottled Applesauce Cake

2/3 cup shortening
4 eggs
2 cups applesauce
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
2/3 cups raisins
2 2/2 cup sugar
2/3 cup water
3 1/3 cup flour
1/2 teaspoon baking powder
1 teaspoon cloves
2/3 cup nuts
Cream together shortening and sugar. Add eggs, water, and applesauce. Sift together dry ingredients and add to creamed mixture. Grease very well 8 wide mouth pint jars. Fill half full. Bake at 350 degrees for 45 minutes on a cookie sheet. Have lids hot and apply to bottles. Seal as soon as removed from oven.

Peach and Raspberry Jam

6 cups berries
9 cups peaches
2 packages of pectin
1/2 cup lemon juice
16 cups sugar

Follow pectin recipe on how to mix. Cook about 8 minutes or until it make a double drop from spoon, like jelly does.

Marshmallow Dessert

1 package marshmallows
1 pint cream
3 cups crushed graham crackers
1 cup crushed pineapple
1 cup milk
3 teaspoons margarine

Mix together graham crackers and margarine. Line a 9 x 13 pan with crumbs saving a few for the top. Melt marshmallows with milk. Cool, then add pineapple and whipped cream. Put on top of graham cracker crust, top with remaining graham crackers.

Fry Cakes

5 cups milk
4 heaping tablespoons shortening
1 cup sugar
3 tablespoons yeast
8 teaspoons salt
16 cups flour

Mix together milk and eggs. Add 6 cups flour and yeast. Add 10 more cups of flour and knead. Let rise until double, roll 1/2 inch thick. cut and fry in hot oil. Frost with maple or chocolate frosting.

Quick Dutch Oven Meal

1 pound ground beef
1 medium chopped onion
1/2 cup chopped celery
1/4 cup green pepper
1 teaspoon salt
1/2 teaspoon pepper
1 large can or quart tomatoes
1 cup uncooked macaroni
1 cup mild cheese
1/2 teaspoon pepper

Cook hamburger, onion, celery and pepper in the Dutch Oven, stirring until it is cooked through, but not too brown. Add tomatoes, salt, and pepper. Bring to a boil and cook for 5 minutes. Add macaroni, cover and simmer on low heat for 20 minutes or until macaroni is done. turn off heat and sprinkle the top with grated cheese. Server right from the dutch oven.

Navy Bean Soup

1 pound dried navy beans or great northern
1 bay leaf
2 cups chopped onions
2 chopped carrots
2 cloves garlic, chopped
1/4 teaspoon pepper
1 meaty ham bone or 2 smoked ham hocks
1 med potato diced
2 stalks celery chopped
1 cup tomato sauce
1 teaspoon salt
10 cups water Soak beans for four hours or over night in enough water to cover beans. Drain into a colander. In a large soup pot bring 10 cups of water to a boil. Add the beans, ham bone, and bay leaf. Bring to a boil, reduce heat to low and cook covered until the beans are almost tender, one and a half to two hours. Remove as much meat as possible from the ham bone, cut into small pieces and return to the pot. Discard the bone. Add the salt, onions, potato, carrots, celery, and garlic. Cook at a gentle simmer, uncovered, until the vegetables are very tender. 30 to 40 minutes. Add the tomato sauce and season with salt and pepper. Discard the bay leaf.

2 cups flour
3 tablespoons melted shortening
3 teaspoons baking powder
1 egg well beaten
4 tablespoons sugar
1 cup milk
1/2 teaspoon salt Mix together egg, shortening, milk, and sugar. Add to dry ingredients. Mix together, do not over mix. Bake at 350 degrees for 15 minutes.

Homemade Hamburger Helper: Cheesy taco

1 Pound Ground Beef
2 cups water (Add 1/4 cup water if tomato has very little liquid)
1/2 Cup milk
1 Cup rice
1 Cup stewed or diced tomato
1/2 Cup cheese
1/2 Cup corn
1 Cup tortilla chips

To make Sauce Mix
1 Tablespoon cornstarch
1 Tablespoo chili powder
1 Teaspoon onion powder
1 Teaspoon garlic
1 Teaspoon salt
1 Teaspoon sugar 1) Brown ground beef
2) Boil 1/2 Cup milk, 2 Cups water ,1 Cup rice ,1 Cup of stewed or diced tomatoes ,The Sauce Mix. Simmer for 14-16 minutes. During the last 5 minutes add cheese and corn
3)Let thicken 5 minutes

Mother's Honey Candy

1 cup honey
2 cups sugar
2 tablespoons butter
1 tablespoon vinegar
Cook to soft crack stage. Put on buttered plate. Cool, then stretch. Break into pieces by hitting candy with the handle of a knife.

8 cups flour Dissolve yeast in 1/2 cup water, set aside. Beat together water, sugar, shortening, salt, and powdered milk. Add yeast. Add 4 more cups flour and eggs. Add remaining flour. Let rise until double in bulk. Roll on lightly floured board. Cut in circle, double over. Place on buttered pan, butter both sides. Let rise until double in bulk. Bake at 375 degrees for 10-15 minutes.

Shake and Bake

4 cups blended bread crumbs
1 tablespoon salt
1 tablespoon paprika
1 teaspoon pepper
1/2 cup oil
1 tablespoon celery salt
1 tablespoon onion salt
a few parsley flakes Blend bread crumbs. Add seasonings, mix. Add oil, mix. Can be stored in freezer. Use on chicken, pork chops, or fish. Shake meat in shake and bake mix. Put in pan and cover with foil. Bake chicken 4 minutes at 375 degrees. Pork chops 1 hour at 375 degrees.

Tater Tot Casserole

1 1/2 hamburger
1 bag tater tots
2 cans of cream of mushroom soup
1/2 cup chopped onions
1 can of milk
1 cup of cheese Brown hamburger and onions. Mix soup and milk. Line a 9 x 13 cake pan with tater tots. Add hamburger on top of tater tots, top with soup mixture. Sprinkle cheese on top. Bake 30 minutes at 350 Degree.

4 eggs
1 2/3 cups sugar
1 cup oil
2 cups pumpkin
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon

1 teaspoon baking soda Beat eggs, sugar, oil, and pumpkin. Stir together dry ingredients. Add sugar mixture and flour mixture together. Put in greased sheet cake pan. Bake at 350 degrees for 25 to 30 minutes. Cool and frost. Frosting: 1-3 ounce package of cream cheese, 1/2 cup margarine, 1 teaspoon vanilla, and 2 cups of powdered sugar. Soften cream cheese and margarine, add vanilla and powdered sugar, beat with mixer.

Toffee

1 cup sugar
3 tablespoons corn syrup
1 cup chopped nuts
1 cup margarine
1 tablespoon water
3/4 cup chocolate chips chop nuts. Butter a cookie sheet and layer nuts on it. Cook sugar, margarine, corn syrup, and water to a hard ball stage, mixture will slightly change colors. Pour toffee over nuts, spread lightly. Sprinkle with chocolate chips. When they are melted, spread them evenly and top with remaining nuts. Let cool and break into pieces.

White Fudge

2/3 cup heavy cream
1 dash of salt
2 cups miniature marshmallows
3/4 cup nuts
1 2/3 cups sugar
1 teaspoon vanilla
1 3/4 cup coconut or candied cherries Mix cream, sugar, and salt in heavy pan. Boil for exactly 5 minutes. Pour over marshmallows, stir until melted. Stir in coconut and vanilla. Pour into a buttered 8 inch square pan. Chill until firm, cut into squares.
